I traveled the state quite a bit in the last 4 years and have come to the same conclusion. I’ve not given up though.I have been looking for the last 10 years as far as I know Texas don't do Pastrami or at least do it well.

Pretty good Philly at Craft Grill in Tomball.Good Pastrami in Texas is harder to find than Philly Cheese Steak or NY Pizza.
