    I'm largely a culinary misfit that plays on my own ideas, and I've been far too busy to post much lately, but I have been in the kitchen nonetheless.

    DrPepper/soy/garlic braised chicken thighs w/ water chestnuts and a side of spam musubi w/ furikake.

    Have a super-slow brisket going for later this week.
    I’m on step 1: marinate for 24 hrs

    Step 2: sous vide for 70 hours @ 125 degrees

    Step 3: smoker for 4 hours

    Seems foolproof...we’ll see.

    My 5 year old makes a mean "salad" as she calls it with tomatoes (that they grew), mozzarella, black olives and a splash of greek dressing. I love that she is always in the kitchen learning, knowledge not shared is lost. View attachment 215886

    So it’s been a while since I visited this thread. We all gonna have to up our game. JC, you are killing it.

    On another note, We’ve only eaten out 2 times since March. We’ve become better cooks with all this crap. Not a bad thing.

    Quite true. I sort of enjoyed brushing up on my cooking, smoking and grilling skills. But honestly, I do enjoy cooking.

    While I enjoy cooking, I especially enjoy the prep phase of getting all the ingredients together and cut-up so they’re “just right”.

    Just seeing all the ingredients organized and ready to go is cathartic.

    Been there. Early in my military flying days, I’d drive home listening to soft classical music after the debrief, then come in and execute food prep precisely in the kitchen, no matter the distraction.

    It was quite relaxing.

    Unlike almost everyone here it seems, neither my wife nor I are much in the way of cooks. I've gotten better at grilling and cooking over the years but it's never been a huge interest for me.

    We eat out a fair amount, mainly to give us something to do.

    We also tried out a meal kit company for a few meals just to give us some new recipes and to learn a few new techniques. I've enjoyed trying it out.

    With the new smoker coming I've finally shown some interest in cooking so maybe I'm turning a corner.

    To All,

    Tonight's supper was my "locally famous" thick-sliced French Toast (made with my neighbor's GREAT homemade/leftover sourdough bread) with crisp bacon & coffee. Fresh strawberries for dessert.

    Tomorrow night's supper is SOS with fried eggs on top. Cherry pie after.

    NOT at all "fancy" but filling.
    (NETX hillbillies do NOT do "fancy".)
