You might make OOC with that. That’s a nice friggin piece of meat! Dayum
I’ll be several more hours just cutting this thing up , grinding, and vac sealing.Looks great, cooked pics should really look great.
The time you put into it now pays dividends on the table.I’ll be several more hours just cutting this thing up , grinding, and vac sealing.
We decided to cut the backstraps into 1-1/2 to 2 inch steaks
……..back strapped in this case.
This is ONE of the straps on the nilgai I shot last night. It is untrimmed but, damn….. View attachment 433252 I think there are about 50lbs of backstrap on that animal
Probably tastes like nilgaiGot to tell us how they taste....
Like beef? Whitetail?

What @Texasgordo said. lol. If I had to describe it, I would say super lean grass fed beef, but much more tender. Truly the best hunted animal I have ever eatenGot to tell us how they taste....

It does not like nilgai leg bones. It will do them, but they fight back.Is the Bonechopper behaving for you?
It absolutely hates nilgai bones. These are the densest bones on anything I have ever killed/processed. Guess an animal has to be engineered pretty tough when its number one predator at home is a 1000 pound tiger.Signs of use on a blade I made. Such a beautiful sight. As long as it's getting the job done for you, I'm a happy smith.

Nah, adds character.that is a shadow you see in the pic. There is a tiny chip that is probably the result of a dozen hard chops to cut through the upper leg bone, but blade was still sharp AF after the cutting.I just looked closer at the pic - is the cutting edge chipped? Do I need to re-grind it?

Next big nilgai I will just go straight to the axe to break the bones.
Not a reflection on your work at all, your work won against an almost alien super beast .
