Quarantine vittles: what’s cooking?

Fajitas again, because I really don't care to find out how many days I can go without Mexican food. Had some grilled, stuffed jalepenos too. Used some leftover steak and shredded cheese.

Tried my hand at dirty rice for the first time today, and I surprised myself for just winging it. I wanted to add some minced chicken liver...but I'm saving those to try to pull some more catfish out of the lake this weekend. I grew up eating budget bites out of necessity, and although I have more food in the pantry right now than I've ever had in my entire life, it tends to show heavily in my cooking and I find it comforting.

I fixed 4 of those last weekend. Needed a bit more trimming but the quality was very good though Kroger can be hit or miss in that area. Huge and we only ate 1/2 then had leftovers on Monday. Smoking pork ribs in the morning though.
