Welcome to the forum! If you really want to see a lot of Texas just rent a car and drive from East Texas, to deep South Texas, to West Texas (El Paso), far North Texas (Amarillo), then back to DFW and South through Austin. etc. (good luck on getting it done in a week )!
Yeah I would pick a city first unless you like to drive.
San Antonio has the Alamo, missions, river walk
Fort Worth has the stockyards (Billy Bobs Honky Tonk, H3 steakhouse, White Elephant Saloon, etc), downtown festivals, and over in Dallas (30mi away) is the state fair. http://bigtex.com/schedule/2015-10-10/
Too bad you're going to miss Hicksville by a week! That's a big, annual meet-eat-and-shoot for TGT folks.
When you decide where you'd like to start (Austin and San Antonio are less than two hours apart), let us know.
One thing to note: the State Fair of Texas is going on in Dallas during that time. It's pretty representative of Texas, has livestock, a rodeo, and all sorts of other stuff. Would be a GREAT thing to experience and would be close to the Fort Worth Stockyards, relatively speaking (an hour or so away). LOTS of options around Dallas.
Welcome to the US and Texas. Make sure to get some BBQ and see a rodeo. If you get to Ft. Worth, the stockyards and museum district would be good to see. Also in the area is Cowboys stadium, Dallas, and Six Flags (which may be closed for the season but I don't know). San Jacinto monument near Houston and other historical sites around the state. Alamo in San Antonio, honky tonks in Austin etc.

I already said my hello. When I first saw the title to this thread... Danish Sniper... I thought, "Who would want to shoot a breakfast pastry?" I mean really, a bagel I could understand but a Danish?

Land in Dallas AirPort stay there for a day or some rent a car (whit aircon ) drive to San antonio and stay in hotel there. Maby take a trip to Austin.
