i know a place that you can get the ultimate buttermilk pies.
    any kind that you like.

    it is somewhere near seguin.

These pies are not merely baked - they are forged out of Texas History itself.
If and or when these pies are to be or have been made available - they are or are to be bestowed only upon the truly deserving.

Not a cafe diner or anything but it is a business.

I like this place. Don't get there very often though. :(

    Royers Round Top Cafe

Used to go there all the time when I was working in Giddings. Super awesome food served by a not so super awesome liberal. That fat ass that owns the place literally told me to my face that he was for complete confiscation and that he and his good friend Willy were actively trying to achieve that in Texas.

    Smoke another dubie bro.

Needless to say I have not been back. There's plenty of good food out there.

Now I'm interested. Buttermilk pie is my absolute favorite. I also have a high school buddy who is in prison down there who I visit every once in a while (yeah, we all know somebody who f'kd their life up. Big whoop. Get over it). Please try to remember the name of the place.

Man, that's unfortunate. They had good pies.

I know that Clear Springs Cafe in New Braunfels makes some damn fine pies. Only at the original location though. Their Plano, Tyler and Midland locations don't really get into the pies as much. If you're ever in NB though you will not be disappointed.

If you ever find yourself in Windom (Hwy 56 between Bonham and Honey Grove) you will be missing a pie bucket list item if you don't stop in at The Feed Sack.

Forgive me but what exactly is a Buttermilk pie?

Here is a simple, basic recipe that takes about 15 minutes to make and another hour to cook a pair of thin (or one deep dish) pies for right around $10

    Ingredients:

    1/2 cup butter melted
    1 1/2 cups sugar
    3 tablespoons flour
    3 eggs, beaten
    1 pinch salt
    1 teaspoon vanilla
    1 cup buttermilk
    1 deep pie shell

    Directions:
    Preheat oven to 400°F.
Beat the butter and sugar together until light.
Add the eggs and beat; then beat in vanilla.
Sift the dry ingredients together and add to the batter alternatively with the buttermilk; beat until smooth.
Pour into a deep dish pie shell and bake at 400F for 10 minutes, reduce heat to 350F and bake for 50-60 additional minutes.

Pie should turn a nice golden brown and a knife inserted should come out clean.
If beginning to get too brown before done, cover with foil.

Now if you want (and some do) you can add some lemon zest, coco powder, coconut, etc to add additional flavors.
