That was some damn fine meatloaf I made. I was so hungry I just ate a couple of slices. I put ketchup in top & thought it really made the loaf.

So who use what fillers? I used bread crumbs on this one, but have used various cracker crumbs, raw oat meal, rice, even put diced spuds in it.

This one got no onions or peppers diced into it. I think they are great except in sammich meat loaf. To me they make it too crumbly for a sammich.
We use panko bread crumbs and an egg, it holds together well without getting too dry or tough.

I don't buy store bought bread crumbs, or cracker meal. It gives me a excuse to break out the blender. Panko is really just fresh bread crumbs. I threw the heel &2 slices in the blender to make mine, over did it & thought about freezing the excess, but then they wouldn't be fresh. Milk & eggs have always been in ant meat loaf I have made.

Got some brisket slices out of the freezer, going to heat them in a skillet and throw in a big bunch of spinach long enough to wilt it. Usual veggies and fruits on the side.
