    Chicken fry them, 1000 times better than bacon wrapped.

    Tuff doing work. His first retrieves 100% by himself. The light went off/on today.

    Very good looking dog and thanks for the idea of chicken frying the birds!

    Everyone tends to go Jalapeño, bacon, cream cheese when they think of dove and I have to admit I have too so I'm very interested in other ways of cooking them.

    Need to get Vaquero to tell the story about the dove fajitas.

    And +1 on the chicken fried dove. My grandma did that as well and added cayenne. We would often eat it with fried catfish. And use tarter sauce on both. Yeah yeah, I know.

    Me too. And, if they're not destined for a gumbo, I also "chicken fry" duck and goose breast the same way, using the same type seasoned batter.

    If doves are going in a gumbo, I use the dove breast with breast bone; duck and goose in a gumbo, the whole bird cut in quarters.

    If ducks, doves and geese are being chicken fried, I filet the breast from the bone of all three species before frying.

    Likewise with venison back strap - sliced crosswise about 1/2" thick, tenderized slightly with a tenderizer hammer, and chicken fried the same way as the above is a good way to entice folks who normally won't eat venison.

    Hot Damn!!! - got an invite to go next weekend after next (after Hicksville of course) to South TX. Going down Thursday - get to hunt the afternoon, Friday and Saturday morning. Get to play with some pointers too, trying to get them steady on quail - no shooting yet. Apparently they've got more than they have in years. FIL went down last weekend and said, just driving around, they flushed 6 coveys in an hour.
