    If folks don't want to drink beer, don't force them. They say there's a CO2 shortage since the ethanol production has tanked (co2 being a byproduct). That means CO2 prices are going up and supplies are going down. So if you like your beer with a fizz in it, that's kind of a big deal.

    Don't encourage others to drink it. Save it for those of us who want it. (and probably those idiots that hoarded all the toilet paper too, but I'm guessing they'll have a much harder time trying to sell beer for 5 times the price on craigslist than they did the toilet paper)

    Coconut curry chicken with (pretty old) squash, carrots, chickpeas, water chestnuts and cashews. I cant wait for my HEB bulk spice section to reopen...their coconut curry spice is hard to beat! This is a simple dish, and I could eat just the "gravy" over white rice and be happy.

    Coconut curry chicken with (pretty old) squash, carrots, chickpeas, water chestnuts and cashews. I cant wait for my HEB bulk spice section to reopen...their coconut curry spice is hard to beat! This is a simple dish, and I could eat just the "gravy" over white rice and be happy.

    I'll give it a thumbs up because it looks good and I would try it. I just hate squash. Growing up not rich in dollars, we had a crappy garden, the only thing that grew well was squash and zucchini. Come harvest time thats all we ate.

    That also reminds me of fish. Having heavy Scandinavian and Canadian roots we ate a lot of fish. It was free, costing only time and effort outside on a lake.... away from people... As a little, it was lake trout from Lake Superior (big ones). In my youth it was walleye. We ate so much fish that I skipped it from my late teens to late twenties. Now I am back to loving it. My kids like it too so I can move it into dinner rotation on the regular.

    I would have preferred cauliflower in place of squash (it was actually zucchini) to be honest. The vegetables needed to be used so I used them. I didnt grow up with a lot, i know the meals that you speak of. I'm coming back around these days, and I find those old standby meals to comfort me.

    Lake trout are huge fun to catch. I’ve fished for them in Canada on deep lakes. They’ll grab a spoon and head straight to the bottom. Good eating too.
    My grandpa (old school feller, born 1910 or so) was as Scandinavian as they came. The family landed in Northern Minnesota on Lake superior when they came over. Several meals a week were trout and potatoes. He would head out onto Lake superior after work, hit the honey hole and catch fresh dinner. He would drop spoons into a couple hundred feet of water and reel them in.
