    I'm seriously contemplating making Acapulco Enchiladas from an under-rated Sunset cookbook.. (Chicken filling, with almond slivers and chopped/diced black olive, and of course cheese), served with shredded lettuce, sour cream, and guac) which also has a good starter recipe for Chili Verde... I use a lot of dark red wine in mine instead of chicken broth and lemon juice.

    Don't get me wrong, I do like vegetables, and do enjoy vegetarian dishes at the Chinese buffet, but I also like meat.

    I gen don't like vegan food. But I tried a vegan tamale last week. Nicely packed in a real corn husk. Mostly corn/masa outer and boring filling.... I used a lot of ketchup and eventually got tired of it.

    When I go to Chinese buffet, I mostly eat the meat dishes... it all costs the same, so why not??? Their sushi really sucks, but the price is right so I have a plate of that first. Calif rolls and such, not real sushi.

    Chicken Parmesan, but over brown rice instead of pasta.

    Edit - Scratch that...adding peppers, onions, and mushrooms. Not sure what to call it now.

    Up early to smoke a pork butt. Fire is going, meat is tempering under the marinate/rub. Base coated in Hoi Sin, soy, Shirachia, ketchup & minced garlic with Zack’s Original Bar B Que rub

    Pan fried rib eye steak about 1.5" thick cooked to a bloody medium rare, sauteed mushrooms (both the shrooms & steak were cooked in Kerry Gold butter), a salad of Romaine lettuce, tomato & feta cheese with "Ken's Greek dressing" (not Ken's Greek Vinaigrette) and some hazel nuts for desert. Pretty darned delicious if I must attest to it myself but then again - Skye, my pooch, liked the steak too.

    Had a date last night and we went to Cheesecake Factory. I had Shepard Pie (maybe the best I’ve had) and my friend had Orange Chicken. Both were outstanding. Portions were so big there was no room for desert.

    highly recommended.

    Blasphemy to pan fry a rib eye! Pan fry a pork chop or a cutlet or a chicken, but never a rib eye, unless it's a cheap one.
    Pan fry/pan sear done right with a nice crust an blue rare- rare, then making a sauce from the stuck on tasty bits by deglazing the pan with red wine & butter is far from blasphemy.

    I had rib eyes in the weekly menu with mushrooms & baked potatoes. I just didn’t feel like being out on the patio grilling.

    Pan searing is mighty messy to. Need the exhaust fan on high. All the work of shleping fire wood in & maintaining the fire I don’t need it going up the kitchen vent.
