    Nice. Yall should hollar when your gonna be around. Talk guns, clean guns, work on guns, and maybe even run to the range and pop off a few:green:
    I never go with her to her parents. I pretty much dislike them both & have for many years. Matter of fact I've never been to her parents house in Teague! Her parent are not allowed in our house if I'm home.

    We had a good meal night before last which was an old El Paso Chicken Enchilada Kit. Has everything to make it except a chunck of dead chicken and half a cup of cheese. Comes with six flour torts to use to roll up the chicken..which we usually use corn torts but I think they are trying to mimic how they eat in El Paso.

    You could have used a chunk of armadillo...The old timers called them Hoover Hogs for a reason :laughing:

    I think my wife finally got tired of complaining about them after 35 years...lol I switched to Slip Carbon Killer which has a nice fragrance so she can't even complain about the smell...lol

    Monday's Beans.

    Cranberry beans.

    I switched it up on how I prepared them. This time they were covered in salted water(lots of salt). Brought to almost a boil in the pressure cooker pot. Burner off and soaked for a couple hours. Drained and rinsed.

    Fried diced bacon with the grease drained off.

    Chopped onion, three whole garlic cloves, chopped whole jalapeno. Thyme, sage, bay leaf, paprika, onion powder, and pepper....beans added last. ~5 cups chicken broth to cover the beans.

    Pressure cooked for 30mins. High pressure. Served with shredded cheese, a dab of cottage cheese with fresh ground pepper on top. Saltine crackers.

    (I added a few swigs of Tabasco)

    Wife decided we needed a salad due to all the holiday gatherings lately. Salad with tuna and avocado.

    Edit - I followed that up today for lunch with Rudy's Chop on a tater.

    Well I only made the bread which was simple enough, the Asiago cheese and salami are Aldi finds and equal to anything you find at Monoprix in Paris. I was surprised to find the salami for a measly $5.99 in Forney.

    A buddy of mine is a chef he turned me on to rutabaga done like scalloped potatoes.
    Like cheesy scalloped potatoes? That's interesting... My favorite way to do rutabaga is to dice into cubes and oven roasting them in a little oil; seasoned with salt and allspice. I keep them in the oven until they start to caramelize in their own sugars. They come out tasting like somewhere between butternut squash, sweet potatoes, and turnips. I don't really care for sweet potatoes or turnips, but I really like the rutabaga.
