    Today it's a dry brine to the turkey.

    I'm late doing it. Should've done it yesterday.

    Thawed and dried the turkey. Patted down with a sea salt and baking powder mix. Placed back in the fridge, uncovered.

    Thanksgiving leftovers (from yesterday) and sadly the last of the Scalloped Oysters.

    My God the Oysters from the bay were magnificent this year.
    Darn you! You had to remind me I've been remiss in my gulf oyster consumption this year!!!!

    I'm the Forrest Gulf of oyster consumption: " Fried oysters, raw oysters, oysters Rockerfella, oysters Casino, oyster stew, oysters baked in whino, mountain oysters" ....wait???? Oh well , I like them too.

    The Wife took me to Chama Gaúcha Brazilian Steakhouse for an early dinner. Damn it was good. Prime Sirloin, Bottom Sirloin, Ribeye, Lamb, Lamb Chops, Bacon wrapped chicken and sausage.

    Looks yummy. There is one of those kinda places over by where I used to work. Several of their servers lived in some nearby apts. Anytime we saw a guy walking down the street wearing gaucho pants..we knew where they were headed either to work or home. It cost forty bucks to eat in the place somebody said. Guess they were cooking on gas since no wood piles were noted around the place.

    Everybody needs ideas for supper. Post your dinner. Spread the knowledge so your fellow man can make a decent dinner without using creation will power. Besides, it's hard to think when you're hungry.


    As for me,


    Tonight's dinner is Chicken Fried Pork Fingers. Side dish is going to be potato something.


    Deep fryer cuts dish count down. No pots to scrub.
    What kinda fingers do pigs have. I was raised on pickeled pig feet in the beer joints.

    Gentlemen,

    Lentils and Split peas tonight. The split peas look like lentils that are green. The other is a beige. I don't know what's up but they cook together fine. Slightly different taste but it works.

    Fried chopped bacon.

    Celery, onion, garlic powder, other spices...Thyme, rosemary, maybe some oregano. Whatever that smells like it'd go with it.

    And a whole jalapeno with the top cut off. Little bit of white vinegar after it's cooked. ~30mins.


    * change of plan. Used some smoked thanksgiving ham in it too.

    Chicken titty strips fried in a pan.

    Bare chicken strips with chopped onion and jalapeno. Smidgen of peanut oil. Salt and lots of pepper.

    Sides are snapped green beans and mashed potatoes.
