    Bought another Brookshire’s Brothers fruit cake today. This one will under go the needle with some Bacardi Golden Rum!

    Mixed up a brine for a couple of yardbirds I’ll do for the wife’s birthday on the 11th. Never brined a yardbird before. Not sure if I need to just soak it or hit them with the needle too.

    The brine is
    Water, Kosher salt, sugar, garlic, sliced lemons, bay leaves, sage & peppercorns.

    Campbell's Chicken Noodle Soup, oyster crackers & ginger ale. The wife had Tomato Soup. She was convince the breakfast I bought us yesterday after the eye doctor appointment was what was giving us both FJBitis. Luckily 2 toilets in the house for us!

    I started out with a new dual probe thermometer, which was way out of calibration. So this was time cooked. I would have pulled it 40 minutes sooner. Just wasn’t as juicy as my spatchcocks turn out. It had a great flavor from the brine.

    Next brine I‘lol try a soy, ginger, garlic, basil with sera no peppers
