Pressure oven roasted chicken thighs, with a twist.
Besides Cajun seasoning, crushed and rolled the bottom of a bag of 'garlic and herb' pita chips to coat them with.
We'll see how that turns out, with homemade mustard potato salad and steamed asparagus.
Wonder what the rich folks are eating...

Stuffed homemade burgers. Seasoned ground chuck 80/20 meat with garlic, olive oil, onion, worcestershire sauce, salt, and pepper. Stuffed with cheddar cheese, caramelized onions (seasoned with liquid smoke, garlic, worcestershire, salt, pepper, and a few secret ingredients), and caramelized jalapeños. Charcoal grilled in 40 mph gust and pouring rain to PERFECTION and served on potato rolls.

Chicken breast marinated for about 3 hours (vacuum sealed it so it marinades quicker). Marinade I came up with on the spot. Oil, green onion, prepared horseradish, liquid smoke, Sriracha, honey, molasses, onion, garlic, jalapeños, cumin, paprika, worcestershire, dijon mustard, salt, and pepper. Also Charcoal grilled in 40 mph winds and pouring rain to PERFECTION.

Grilled corn with my special combo of butter and Adobo. Again Charcoal grilled in 40 mph winds and pouring rain to PERFECTION.

Girlfriend helped with all fixings and preparation and let the man be the man playing with fire. She also baked an amazing fudge "cake" that was deserving of note since I don't like cake and I wanted more.

It was delicious and only have a photo of the aftermath.

Country style pork ribs, garlic mashed potatoes with homemade gravy, and corn on the cob. To celebrate OC.

Never thought I would say it, but damn if an ear of corn, with husk on, and microwaved on high for five minutes, then cut an inch off the thick bottom end and squeeze the husk off w/silk, is not the best corn on the cob I've ever eaten.

    (two ears, 8 minutes)

Friends coming over tonight so I just made a run down to Salt Lick. (Fortunately I live about a mile from the original location in Driftwood.) Brisket, beef ribs, pork ribs, sausage, and turkey. Add mustard potatoe salad, pickles, onions, and jalapeños and you've got a feast. We will eat good tonight!

    Left over T-Bone steak.
Grilled corn on the cob from same cooking.

Momma said she'd whip something else up to go with it.

Angus ribeye (broiled in oven, skeeters too bad outside because of rain)
    Avocado/tomato salad.
Corn on the cob (m'waved in husk, as above)
    Mushrooms, sauteed w/butter and wine.
Lucerne's orange sherbert, in lieu of Blue Bell, dammit.
