    Seriously, how perfectly does cauliflower substitute for potatoes?

    Love mashed potatoes, and even for my educated taste buds it's hard to tell the difference, and then any difference become irrelevant with the right seasoning.

    Surprised quite a few folks who came for steaks and couldn't believe the mashed potatoes were not.

    Texture and seasoning is what makes that possible. I make them using an old single bladed KitchenAid blender, not a "food processor" ... same one I use for Margaritas, "puree" is the texture to shoot for.

    Cut up a whole cauliflower into bite sized pieces, steam them for about 10 - 15 minutes, until they slide off a knife blade, puree them in the blender, then add:

    About a 1/3rd block of Philly cream cheese, half stick + of pasture raised butter, 1 Tbs garlic powder or fresh mashed garlic, salt and pepper to taste. Wait until the end to get the salt to your taste.

    Puree ... don't chop. Will stay in the fridge for well over a week, and survives a M'wave with no problem.

    Can you have tomatoes on KETO?

    Yes ... wouldn't think of not having a small to medium sized, whole tomato in my nightly salad.

    Tomatoes have 4.8 gms carbs, 3.2 grms sugar and 1.5 gms fiber, that is still low enough to keep most folks in ketosis.

    (In keto you use net carbs, determined by subtracting the amount of fiber from the total carbs, so you use the net carbs for that tomato as 3.3 gms (4.8 - 1.5), for counting your daily carb count).

    Idea is to keep the sugar from very low to none, but hell, you gotta live ...

    Didn't think to take a pic, but my daughter brought me some chicken enchiladas from Cowboy Chicken. They put a sour cream sauce that has peppers puréed in it. It's a top 10 favorite for me.

    If you have one close, give it a try.

    K, I can never get my cauliflower to come out that creamy. Tried this evening and it didn’t cut it. Are you pureeing yours?

    Dinner was meatloaf, half-ass faux cauliflower mash, steamed snow peas, and homemade garlic coleslaw.

    The sauce for the meatloaf has been in the family cookbook for years. Mustard powder, ketchup, and brown sugar. I thinned mine with water and used a sugar free ketchup and it still rocked.

    As mentioned before, use a Kitchen Aid blender instead of a food processor ... same one I make frozen margaritas with, on the puree settings.

    I either steam, or mwave, the cauliflower, cut to small chunks that will fit between the blades, until they're tender enough that they slide off a knife blade ... usually about 10 minutes in a steamer.

    Puree first, add the ingredients afterward, puree again.

    Tried it in a food processor, and a two bladed Ninja blender, without getting the right texture for that smooth, mashed potato mouth feel.

    k, how and the hell do you get your cauliflower so creamy? :)

    Seriously though, I have a high horsepower blender and it still came out lumpy. I’ll purée it longer next time, that should do the trick.

    I’m eating some of our weekly meal preps, main protein source was a 3.6lb well marbled beef roast that I scored for $8 at Kroger, cut into 1/2” cubes (while partially frozen, try it!) and both cooked in the instant pot. Beef, carrots, tomatoes and lentils and then beef tips and gravy. My future ex wife made ground pork (from a pig that I raised and processed), vegetable and mixed grain soup for the girls for dinner.

    My wife was all excited about the Instapot, so I got her one for Christmas. That thing is still in the box.
