I think if I pay more attention to this, the dish will cross over from "decent" to "good". For a diabetic, finding healthy, filling dishes is a good thing and I think this will turn out to be one, thanks to y'all's input.Which is probably why most recipes that call for fresh spinach say "add spinach and as soon as it's wilted, you're done cooking."
