    I made homemade chicken pot pie from chicken breasts I slow roasted over night.
    I also made a fruit salad with a horned melon, pineapple, tangerine and red seedless grapes. Came out great!

    Sous vide ribeye...wife likes it rare, I like it medium-rare, so we compromised on this.

    3 hours @ 123 degrees.
    2 minutes per side seared on the grille, another 1 minute x 3 sides for the edges.

    The warm lighting in my kitchen doesn't quite do this justice...

    Yesterday, I tried to eat a healthy dinner. I made a "Joe's Special". It's a breakfast scramble but who doesn't like breakfast for dinner?

    Basically, you cook down some onions and mushrooms, brown some ground beef, throw in a bunch of cooked spinach, then bind it all up with beaten eggs. There's salt, pepper, basil, and oregano in there, with some cheese grated on top.

    It sounded like something good and really, really healthy for a diabetic like me. After all, I like all those ingredients. The reality wasn't so good.

    The bitterness of the spinach, something that usually doesn't bother me, was somehow brought to the fore. The first few bites were different and actually pretty good. Then it just got heavy, bitter, and nauseating.

    Well, you have to make mistakes to learn, right?

    Ben, I'll go out on a limb and suggest that maybe using uncooked spinach might have been the way to go. That's what I use in my version of Joe's Special, and I've never had the "spinach forward" issue.

    I just read this. I agree. Ben, I've made this in the past with fresh spinich. cooked spinach brings out some of the stronger flavors. I've never had this problem when I've made this dish.

    Had this last night. Pork loin came from a hog I killed last weekend. Smoked for about 3 hours.

    Woulda had more bacon on it...but breakfast that morning got in the way.

    cooked spinach brings out some of the stronger flavors.
    I made the same dish tonite with fresh spinach and it was decent. However, I may have cooked the spinach a bit too long.
    Which is probably why most recipes that call for fresh spinach say "add spinach and as soon as it's wilted, you're done cooking." ;)
    I think if I pay more attention to this, the dish will cross over from "decent" to "good". For a diabetic, finding healthy, filling dishes is a good thing and I think this will turn out to be one, thanks to y'all's input.

    fucking protein shake. doc says no more sugar and carbs and I'm too lazy to make anything. Wife and kids had pizza which pisses me off.

    Be careful with the no carb diet. It has been proven to cause hair loss and mood changes.

    Fried pork chops and cabbage. Fry some sliced up bacon in a big pot. Add ripped up cabbage, chicken broth for liquid, salt and boil it down.

    Hair loss don't mean much to me. It's happening.
    My mood though. Yeah. I've been "cranky " lately.

    Any pro tips?

    Absolutely
    You need to replenish your serotonin levels. A low carb diet depletes serotonin, which causes anger, crankiness and depression.
    The B vitamins, vitamin D, niacin and folic acid make serotonin. Take these vitamins and you will start to feel better after a couple of weeks. Maybe sooner depending on how your body metabolizes.
